Chicken (Marinated)

Here are our favorite chicken marinades:

  • Citrus Dill
  • Memphis Style or Dinosaur BBQ Sauce
  • Rosemary Balsamic
  • Teriyaki

Chili

  • Peel, dice and sauté 1 medium-large onion until translucent
  • Brown approximately 2 lbs. of ground beef, and drain
  • Mix both into crock pot along with:
    • 2 cans of low-sodium kidney beans, undrained
    • 2 cans of chili beans
    • 2 tablespoons of butter
    • 1 can of condensed tomato soup
    • 3-4 cups of tomato juice (depending on desired thickness)
    • 2 cans of stewed tomatoes   
    • 2 packages of chili seasoning
    • 2 heaping teaspoons of minced garlic
    • Chili powder (to taste)
  • Simmer on high 3-4 hours, or low 5-8 hours

Mac & Pepper Jack

  • Pre-heat oven to 350°F while boiling 12 oz macaroni to perfection
  • Drain cooked macaroni, return to pot, and mix in the following:
    1. 1/2 cup butter
    2. 2 cups pepper jack cheese
    3. 2 cups sharp cheddar cheese
    4. Mix 2 cups milk and 1 egg together and pour over macaroni mixture
  • Stir macaroni until butter is fully melted (cheese will be semi-melted)
  • Spoon into baking dish
  • Separately mix the following ingredients:
    1. 1 cup bread crumbs
    2. 1/2 cup parmesan cheese
    3. 2 tablespoons butter
  • Sprinkle dry mixture over the top of the baking dish
  • Top with onion straws
  • Bake for 30 minutes

Meatloaf (Italian)

  • Mix the following ingredients:
    • 2 lbs ground beef
    • 2 cups seasoned bread crumbs
    • 4 eggs
    • 1/2 cup parmesan cheese
  • Pack mixture into a baking pan, packing down the edges
  • Pour a layer of tomato sauce over the meat mixture, allowing it to run down the sides of the pan
  • Bake for 60 minutes at 375°

Parmesan Tilapia

  • Pre-heat the broiler
  • Mix the following ingredients well:
    • 1/2 cup of parmesan cheese
    • 1/4 cup of soft butter
    • 3 tablespoons of mayonnaise
    • 2 tablespoons of lemon juice
    • 1/4 teaspoon of dried basil
    • 1/4 teaspoon of black pepper
    • 1/8 teaspoon of onion powder
    • 1/8 teaspoon of celery salt
  • Spread tilapia filets out on broiling pan
  • Cook for 5-7 minutes (optionally flipping halfway)
  • Remove fish from the broiler, cover each filet with a thin layer of the mixture
  • Cook 3 minutes or until topping is brown and fish is cooked
